Jamie's Oysters



  • 12 Oysters in Half Shell With Juices

  • 4oz Butter

  • 2 Shallots Finely Chopped

  • 3 Tablespoons Lemon Juice

  • 1 Tablespoon Butter Melted

  • Salt, Freshly Ground Pepper

  • 2 Tablespoons White Wine

  • Salt, Freshly Ground Pepper


Preheat the grill. Flash the Oysters under the grill for a few seconds until plump and curled up at the edges. Drain, retaining the juices and keep warm.

Saute the shallots in the melted butter for 2 - 3 minutes. Add the Wine and strained Oyster juices and stir over a medium heat until the liquid reduces to about 3 tablespoons.

Add the solid butter bit by bit constantly whisking to thicken the sauce. Add the lemon juice, salt and pepper.

To Serve

Spoon the sauce over the warmed Oysters and serve immediately.
